Game-changing toast for the broke bruncher

Cheap date.

Brunch is the new booze-up. With new hip/cool/trendy/matcha/glutenous cafes popping up left, right and centre, it’s clear that our stomach cravings are leading us into a heavy debt… otherwise known as ‘brunch broke.’

Yes, there is the option of dividing those pay checks into yet another subcategory (Uni bills/phone bill/beauty bills/travel savings/life savings/breakfast savings), but we have another idea.

Toast.

Cheap, easy to make (for the most part), and utterly delicious if spiced up appropriately. Try these game-changing, healthy-ish, toast toppings and never chop out a 20 for a piece of bread again.

1. AVO ON TOAST
Game-changer: Toasted cumin seeds and hummus

INGREDIENTS

Multigrain bread UNSLICED
Avocado
Boiled egg
Hummus
Chia seeds
Cumin seeds
Chilli flakes
Salt/pepper
Lime

METHOD

1. Heat a saucepan of water until boiling, add eggs and cook for 7 minutes

2. Slice the bread THICK. No messing around here, we’re talking double the size of a regular slice. Place in toaster

3. Crush avocado in a separate bowl with salt and lime

4. Thinly scrape hummus along the base of hot toast

5. Top with avocado, spreading precisely over surface

6. Slice egg in half, place on top of avocado

7. Heat up a frypan and dry toast cumin seeds. Remove from heat when seeds become fragrant

8. Top toast with chia seeds, toasted cumin seeds, chilli flakes, a squeeze of lime and a generous pinch of salt

Game-changer: Coconut

INGREDIENTS

Multigrain bread UNSLICED
All-natural peanut butter
Honey
Coconut oil
Banana
Desiccated coconut
Cinnamon

METHOD

1. You know the drill. Slice the bread THICK and set aside

2. Slice banana down the middle lengthways and chop in half

3. In a frypan, place a tablespoon of coconut oil and honey. When hot, place banana face-down on the pan. Leave to sizzle and caramelise for about 5 minutes or until gooey-golden brown

4. Toast the bread

5. Generously lather coconut-peanut spread onto hot toast

6. Place sizzling bananas in Jenga formation

7. Top with coconut flakes and sprinkle with cinnamon

3. STRAWBERRY FRENCH TOAST
Game-changer: 90% dark chocolate (Lindt duh)

INGREDIENTS

Multigrain bread UNSLICED
Fresh strawberries
90% dark chocolate
Butter
1 egg
1/2 cup milk
1 tbsp honey
Oil spray
Yoghurt

METHOD

1. This time around, cut the bread EXTRA THICK. Then, using a sharp knife, make a pocket in the centre

2. Slice strawberries finely and break up chocolate (the better the quality of the chocolate the thinner it will be). Delicately place in bread sleeping bag

3. In a bowl, whisk together egg, milk and honey. Carefully douse bread, strawberry and chocolate package in bowl until all of the liquid has been soaked up.

4. Heat a frying pan and spray with oil

5. Delicately transfer soaked bread onto pan, cooking until golden on each side

6. Place cooked toast into the oven to finish cooking until the chocolate in the centre is melted 😀

7. Mix together more honey into yoghurt

8. Slice toast and structure onto plate with a dollop of yoghurt and extra strawberries

9. Fall gracefully into a food coma.
