Spritzing into the weekend!

WATERMELON & CAMPARI DAQUIRI (makes 3)

1/2 watermelon
juice 1 lime
1 tbsp caster sugar
70mls Campari
70mls Vodka
3 cups ice

1. Place all ingredients but ice in a blender until completely smooth
2. Clean and Dry Blender
3. Crush ice in blender
4. Fill each glass (preferably pre-frosted) 3/4 high with watermelon and top with as much ice as possible. Stir

SWEET POTATO OPEN TOASTIES
1 sweet potato
vegetable oil
thick slices of a quality sourdough loaf
4 cloves roasted garlic
250g ricotta cheese
150mls sour cream
juice/zest 1 lemon
salt and pepper

1. Heat oil in a heavy-based saucepan until ready-to-fry
2. With a vegetable peeler, peel thin strips of potato. Fry until golden brown and cool
3. Smash garlic into a bowl with ricotta, sourcream, and lemon and mix. Season well with salt and pepper
4. Grill or toast slices of bread. Top with ricotta mixture and then sweet potato crisps.
5. Eat by the pool with a Watermelon Daiquiri
