3 cocktail recipes to see you through this summer

The perfect cool-down.

Summer is a time for celebration and socialising.

And when the sun is out, one of the best ways to catch up with those nearest and dearest to you is by spending some time outside with a healthy dose of day drinking.

With the help of Matso’s Broome Brewery, we’ve rounded up three summer-ready cocktails for those picnic and poolside kind of days.

Pineapple Sangria

Ingredients

  • 1/2 a pineapple, cut into pieces
  • 4 large sprigs of fresh basil
  • 3 cups 100% pineapple juice
  • 1/2 to 1 cup of rum
  • 1 bottle of white wine (use riesling for a sweeter sangria)
  • 1 bottle of Matso’s Mango Beer (or substitute with sparkling water)
  • 1/4 cup fresh lemon juice


Method

1. Place half of the pineapple pieces and basil sprigs in the bottom of a large pitcher.
2. Add all the liquid ingredients and stir.
3. Serve over crushed ice and garnish with the rest of the pineapple and fresh basil. Either serve immediately or let the flavours meld overnight.

Dirty Mojito

Ingredients

  • 30ml spiced rum
  • 10ml fresh lime juice
  • 10ml sugar syrup
  • 1 lime, wedged
  • 5 mint leaves
  • 1 bottle of Matso’s Ginger Beer


Method

1. Pour rum, lime juice and sugar syrup into a serving glass.
2. Half-fill the glass with ice, add three mint leaves, then fill the rest of the glass with ice.
3. Top up with Matso’s Ginger Beer and stir.
4. Garnish with lime wedges and the rest of the mint leaves and serve.

Ginger Beer Margarita

Ingredients

  • 45ml 100% agave tequila
  • 30ml fresh lime juice
  • 15ml simple syrup
  • 140g ice (plus more to serve)
  • 1 bottle of Matso’s Ginger Beer
  • coarse salt (optional)
  • 1 lime, wedged


Method

1. Line a small serving glass with fresh lime juice, then dip into coarse salt (optional).
2. Add tequila, lime juice, simple syrup and ice to a large glass or cocktail shaker and stir vigorously.
3. Pour liquid (reserving ice) into a serving glass over a few ice cubes.
4. Top up with Matso’s Ginger Beer.
5. Garnish with a lime wedge and serve immediately.
