The ‘Say It With Cake’…cake

Sometimes words just aren’t enough, whether bringing good or bad vibes, who doesn’t love a gluttonous treat to soften the blow?

340g unsalted butter (softened)
285g plain flour
2 1/4 tsp baking powder
1 tsp salt
370g white sugar
1 vanilla bean (or vanilla extract)
3 large egg yolks
2 large eggs
1 1/4 cup milk (room temperature)
A selection of food dyes
1 cup unsalted butter (softened)
5 cups icing sugar
A selection of food dyes

1. Grease a medium sized deep cake tin by lining it in baking paper, allowing excess paper to reach above the tin (for overflow).
2. Sift flour, baking powder, and salt in a medium bowl and set aside.
3. Beat butter with an electric mixer until creamy, add sugar and vanilla and beat on a medium-high speed until light and fluffy (about 3  minutes).
4. Beat in the egg yolks followed by the whole eggs.
5. In three alternating additions, add the dry ingredients and the milk, scraping down the side of the bowl if necessary.
6. Separate the mixture into desired amount of colours you would like to marble the cake with. Place a few drops of food colouring into each bowl and combine thoroughly in a folding manner to maintain the air in the mixture.
7. Layer dollops of each colour into the cake pan until all mixture has been used. With a skewer, chopstick, knife (or anything long and thin), draw squiggles in the mixture to create a marble effect.
8. Bake for 50 minutes or until cooked. Allow to completely cool.
9. For the icing, beat the butter in an electric mixture until almost white.
10. Add in sifted icing sugar and beat until mixture is as white as possible (this will take a few minutes, and water may needed to be added to create a slightly smoother consistency).
11. Once desired consistency is reached (must be stiff), separate icing into desired colour bowls. Go crazy with as many colours as you like!
12. Ice the base of the cake, then place each icing into piping bags (can use glad sandwich bags and cut off the corner) and graffiti to your hearts content. Let your feelings slide.
