An edible glow up.

Raise your hand if you’ve ever had to seriously debate going out clubbing versus staying home and eating an entire punnet of ice-cream.

This year for Vivid Sydney festival, Gelato Messina is combining raves and sugar in the best possible way with a new dessert bar.

Dubbed Blacklight, the pop-up will use UV lighting to serve up eerily glowing sweet treats.

You’ll be able to choose from two limited edition gelato cakes. For chocolate lovers, there’s Dr Evil’s Magic Mushroom – complete with choc gelato, peanut butter cookies, dulche de leche and a neon dark chocolate coating. Alternatively, pick a three-layer dulce de leche creation of milk sponge, cream and crumb with a fluorescent strawberry and cinnamon topping called the Dulce-de-Lighted.

The pop-up will also include guest appearances by Bubble Nini, Edition Coffee Roasters and Devon Café, serving collaborative Messino treats and beverages.

If you’re keen to head down during the festival, just look for the glowing, colour-changing cube at Darling Square. You can’t miss it.

Vivid Sydney runs from May 24 to June 15, with Blacklight opening 6pm – 11pm each night.
